Leading bar and restaurant operator Drake & Morgan is diving into the sea food trend with its new ‘Under the Sea’ menu, celebrating the rising popularity of marine superfoods. With searches for ‘seaweed snack recipes’ up by 245% this year, the new menu highlights a range of sea vegetables and aims to bring British coastal cuisine to the forefront.
Available at all 18 Drake & Morgan locations, including The Folly, Devonshire Terrace, and The Refinery Bankside, the menu features innovative dishes and cocktails inspired by the bounty of the sea. Among the new offerings is cockle popcorn—bite-sized cockles coated in a crispy batter, served with malt vinegar mayonnaise. Guests can also enjoy tempura samphire paired with wakame aioli, and British calamari seasoned with furikake and served with chilli mayonnaise. For mains, there are options like grilled salmon fillet with seaweed mash and samphire salad, and breaded seabass with pickles, katsu sauce, and wakame kelp.
The cocktail selection continues the nautical theme with creative concoctions. The Seagrass Sour, made with Hendrick’s Neptunia gin, combines lemon juice, plum sake, vibrant blue spirulina, and seagrass syrup, supporting Project Seagrass—a conservation initiative for seagrass ecosystems. Another notable drink, Message In A Bottle, features Aperol, lime juice, and Lost Years Rum, with proceeds contributing to wildlife conservation efforts, including turtle hatchling protection. For those preferring non-alcoholic options, the Coastal Fizz offers a refreshing choice with Pentire, a botanical spirit crafted from Cornish flora.
